Happy St. Patrick's Day!

Today felt like 2 really long days! My sister Lily asked me if I could make some cupcakes for O'Brady's since it will be their last St. Patricks Day celebration as they are having to close because of the hi-way they are putting in. Anyway O'Brady's {in case you don't live around here} is an Irish Drive In so as you can imagine they really get into the St. Patricks Day thing:)

Every year they give away green ice cream and do face painting- the kids absolutely love it:)
So every year I take them and stand in a ridiculously long line to get a green ice cream and then again for the face painting, but it worth it:)

I mean look at that face!!

And this one:)
He lost his ice cream and didn't even care-his favorite part of the thing is the cone anyway!

Shane chose-"Kiss me I'm Irish" ;)

How cute is that??!!

Pink Recipe Challenge

Cotton Candy Cupcakes:

1 box white cake mix
* Mix in the usual way.
Add pink food coloring from the neon food colors-4 drops or so.
Add as much cotton candy as you want. I put about a 1/4 to 1/2 a container.
Pour into cupcake tins and bake 350* for 15 to 18 mins.

Frost: I used store bought {gasp not me! I would never do that!} whipped white frosting that I added a few more drops of the pink coloring to. Then I topped them off with some off the leftover cotton candy. Don't add the cotton candy til you are ready to serve though- learned that after it melted onto the top;)
I got this cute cupcake recipe box from my sister Stephanie for my birthday:)
It's got bunches of yummy looking recipe's that I'll be trying out!

These would be so cute for a little girls birthday party. They definitely appeal more to kids though:) They were really sweet! All my kids thought they were great- I made them on Thursday and they are gone today!

Little Girl With A Plan

The kids were playing outside on Sat. when Tiera came rushing in to tell us "the neighbors are selling kettle corn for only 5$ a bag!!!" LOL Then she said " I wish I could sell something" weell I did just bake a bunch of cupcakes the other day....so i told her "you could sell cupcakes if ya want" and she went for it! She set the table up and made a sign while I got the cupcakes ready.

The sign she made was soo cute!

Chatting with the neighbor boy whose mom was her 1st customer:)

Here it is sooo cute!
I added what the flavors were.
Chocolate w/pumpkin cream cheese frosting
and
Pumpkin Gooey w/ brown sugar frosting.

Here she is set up in front of our house, not quite opposite of the little girls selling the kettle corn. I tried to get her to set up next to them but guess she didn't want to. There was a garage sale down at the end of our block, so she ended up moving her little cupcake stand down across from it. She actually sold 9$ worth! WooWhoo:)
This kinda took over my day! I don't know about you all but I hate having my kids play out in the front! {even in our sleepy little town} It just makes me nervous I've heard soo many stories that I can hardly let them. My hubby just smiles and shakes his head but I was raised in the country- no one was ever around! lol You just never know! I'm trying tho...
She had a great time and learned some good lessons too!

Gingerbread Cupcakes

There is just something about cold rainy days that make me feel like doing some baking. So yesterday I set out to make something fallish {that's a word right?} and came up with the gingerbread cupcake. Now after I made them I was thinking gingerbread is kind of a Christmas thing but Whatever it felt fallish at the time! Haha:) Okay hears the scoop on these babies: gingersnap crust, gingerbread cake, spicy white frosting with a sprinkle of nutmeg on top.
Mmmm...yummy!

Here are the little boys coming up for a "look";)
One of the cupcakes had fallen off onto the counter, Max nicely put it back
for me and they went to work on the frosting that was left behind!
Their favorite part:)

So for the 4th I thought I'd try my version of Red Velvet Cupcakes.
I made cream cheese frosting and topped that with some red and blue sprinkles

Cupcake Craze

Lately I have been feeling very inventive and cupcakes for some reason are my expierement! These ones are what I'm calling Maple Brown Sugar Cupcakes:)
Maple Brown Sugar Cupcakes
Here's the recipe...Crust: 1c. oatmeal, 1/4c. butter, 1/4c. brown sugar, 1/2c. flour, dash of each: salt and baking soda, 2T. chopped pecans.
Mix together and press 1T. of crust into bottom of greased cupcake tin.
Cupcake mix: White cake mix,1/2t. vanilla, 1t. maple extract, 1/2c. cinnamon chips
Mix according to box directions, using butter in place of oil.
Frosting: 1/2c. butter, 1c. dark brown sugar, 1/3c. heavy cream, 1t. vanilla, 1t. maple extract,2 1/2c. powdered sugar.
In saucepan melt butter and mix in the brown sugar and heavy cream. Bring to a boil, remove from heat and add the extracts and powdered sugar, using a hand mixer. Place into a large storage bag, snip corner and pipe onto cooled cupcakes.
My taste testers!

Shane the picky one gave them 4 thumbs up!

I also tried these with yellow cake mix but everyone agreed that the white was the best:)
